Food self-sufficiency, on the one hand, and the creation of added value for the product, on the other, are two major levers for improving economic efficiency in organic beef farming. However, given the market's expectations in terms of the organoleptic quality of the meat, aiming for self-sufficiency in fattening and finishing cattle is no easy task. Furthermore, in a global context, cattle farming is widely criticised for its contribution to climate change, particularly through its methane emissions. With this in mind, the CRA-W has spent three years investigating the production of rosé veal from three angles: zootechnical, economic and environmental.
