Incidence of organic alfalfa protein concentrate on growth, skin pigmentation and meat quality of organic yellow-skin Broiler The use of organic alfalfa protein concentrate (CPLB) as a supplier of proteins and pigments is an opportunity for organic yellow skin broiler production. A comparative test between two feeding programs formulated on the same nutritional characteristics and the same pigment concentration: french marigold+paprika (TP program) or organic alfalfa protein concentrate (PX program), were distributed to 1008 male broiler (S757N, Hubbard, France) in 12 floor-pens at Nutricia station - Maïsadour Pomarez (40, France). The alfalfa protein concentrate was incorporated at 5% from 28 to 60 days and then 6,5% until 83 days of age, replacing soybean meal and conventional pigments. In addition to the growth performances, the yellowness of the skin (yellow index b *) and breast meat and tights yields were measured at the slaughterhouse. Finally, 60 breast meats and thighs of each treatment were sent to the laboratory (InVIVOLabs, Vannes, France) for qualitative and quantitative determination of fatty acids.
