Résumé
Le marché, les surfaces (plus lentement) et le nombre d’opérateurs Bio sont en forte croissance. Les produits Bio sont issus de pratiques agricoles et de transformation évitant les intrants chimiques et privilégiant les interventions mécaniques ou biologiques. Ces pratiques, tout comme la commercialisation, sont strictement encadrées par une réglementation européenne et des contrôles indépendants. Dans le respect de cette réglementation, l’offre de produits présente des qualités spécifiques tant du point de vue sanitaire (pas ou très peu de résidus de produits indésirables), qu’environnemental (réduction des pollutions et préservation de la biodiversité). De plus, les produits Bio contiennent d’une manière générale plus de substances bio-actives comme les polyphénols. Ces qualités, accompagnées du logo européen Bio traduisant l’application de la réglementation Bio, fondent la confiance des consommateurs. Celle-ci entraîne actuellement un engouement pour leur consommation, malgré les freins liés à des prix supérieurs. Les filières Bio ambitionnent de contribuer à un système d’alimentation durable.

The organic market, cultivated surfaces and numbers of operators are growing fast (though surfaces grow more slowly). Organic products are based on agricultural and processing practices that avoid chemicals and that emphasize mechanical and biological operation. A strict regulation and independent certification bodies oversee those practices and the marketing. The regulation leads to products with specific attributes, in terms of safety (very few pesticides residues), environment (lower pollution and higher biodiversity). In addition, organic products generally contain more bioactive substances, such as polyphenols. Those attributes and the European logo which proves the application of the organic regulation, are the core of the consumer confidence and popularity. This confidence brings in its trail the craze for their consumption, even if the prices of organic products are usually and logically higher. The organic agrivalue chains aim to contribute to a sustainable food system.

Organic products are the result of agricultural and processing practices avoiding chemical inputs and favoring mechanical or biological interventions. These practices, like marketing, are strictly governed by European regulations and independent controls. In compliance with these regulations, the product offer has specific qualities both from a health point of view (no or very few unwanted product residues) and environmental (reduction of pollution and preservation of biodiversity). In addition, organic products generally contain more bioactive substances such as polyphenols. These qualities, accompanied by the European organic logo reflecting the application of organic regulations, are the basis of consumer confidence. This is currently causing a craze for their consumption, despite the brakes linked to higher prices. The organic sectors aim to contribute to a sustainable food system.
