Cette étude exploratoire vise à faire progresser la recherche sur la préférence des consommateurs pour la consommation d’aliments biologiques en examinant l’association potentielle entre la fréquence de la consommation d’aliments biologiques (CO) et l’attitude individuelle au risque. De plus, en s'inspirant de la littérature, nous étudions également l'association entre le CO et l'amélioration de la santé liée au CO perçue (c'est-à-dire l'évitement des risques pour la santé), la confiance subjective envers la certification, les normes sociales et plusieurs facteurs liés au mode de vie. Sur la base d'une enquête directe auprès de 223 étudiants italiens, une tâche de loterie a été utilisée pour caractériser l'attitude individuelle au risque et un modèle d'équation simultanée a été estimé. Cette étude marque un début en montrant une relation significative entre l'aversion au risque et une alimentation riche en aliments biologiques, offrant un indice pour de futures pistes de recherche dans le domaine biologique.
Résumé anglais
This exploratory study seeks to advance the research on consumers’ preference for organic food eating by investigating the potential association between organic food consumption (OC) frequency and the individual risk attitude. Moreover, inspired by the literature, we investigate also the association between OC and the perceived OC related health improvement (i.e. the avoidance of health risks), subjective trust toward the certification, social norms and several lifestyle factors. Based on a direct survey of 223 Italian college students, a lottery task was used to characterize the individual risk attitude and a simultaneous equation model was estimated. This study marks a beginning by showing a significant relationship between being risk averse and a high organic food eating, offering a hint for future research avenues in the organic domain.
