The organic food and drink industry has grown rapidly over the past two decades. • Consumers of organic products are willing to pay a premium because they perceive organic to be healthier, better for the environment, and better for animal welfare. • Because consumers are willing to pay a premium for organic milk, organic labeling may be viewed as a profitable marketing strategy. • However, no previous study has explicitly measured the extent to which organic labeling creates surplus for fluid milk firms
