Malgré quelques complications logistiques durant la période Covid-19, la filière lait bio a su s’adapter et semble avoir été plutôt épargnée. Selon les prévisions, les prix devraient se maintenir grâce au soutien de certains opérateurs de la filière et à la régulation des volumes. Il faut rappeler que cette crise est survenue au printemps, c’est-à-dire en plein pic de production laitière. En avril et mai 2020, 100 millions de litres de lait ont été collectés. Le Cniel (interprofession) a alors préconisé de diminuer les volumes. Au final, le déclassement technique du lait bio en lait conventionnel n’a pas été beaucoup plus élevé que les autres printemps (le pic de production printanier entraîne souvent des difficultés logistiques qui conduisent à des déclassements vers le conventionnel). Sur le premier trimestre 2020, le prix moyen du lait bio était de 491 €/1000 L. Au second trimestre, le prix a baissé entre 60 et 90 €. Pour les mois à venir, les opérateurs annoncent plutôt une croissance continue, estimée à 1%. La France se démarque ainsi avec ses volumes et ses prix en hausse, alors que ceux des autres pays européens stagnent ou diminuent. Par ailleurs, la consommation de certains produits laitiers bio (lait liquide, beurre, crème) a été renforcée durant le confinement.
